Servings: Four
Ingredients:
1. 2 tablespoonscanola oil
2. 1small onion, finely chopped
3. 2 garlic cloves,minced
4. 1 pound ground pork
5. 2 tablespoons honey
6. 1 tablespoonAsian fish sauce
7. 1/2 teaspoon toasted sesameoil
8. 1 teaspoonfinely gratedlime zest
9. 2 tablespoonsfresh lime juice
10. Kosher salt
11. Freshly ground pepper
12. 1 headbutter lettuce (6 ounces), leaves separated
13.Thinly slicedscallions,for garnish
14. Lime wedges,for serving
1. In askillet, heatthecanolaoil. Add the onion andstir-fry over moderateheatuntil softenedandgolden, 5
minutes.Stir in the garlic andcook for 1 minute. Add thepork andcook, stirring occasionally andbreakingup
themeat,until browned,about3 minutes. Stir in thehoney,fish sauceandsesameoil andcook, stirring, until no
tracesof pink remain in the pork, about2 minutes.Removetheskillet from theheat.Stir thelime zestandlime
juice into the pork andseasonwith salt andpepper.
2. Arrange thelettuce cupson aserving platter. Fill with thepork andgarnishwith scallions. Servewith lime
wedges.

Travel interests: Debra and I enjoy traveling to new destinations both domestically and internationally. I
had the great experience of living in Europe for three years in the early 1970’s and had nearly a year
experience living within the United Arab Emirates while opening the largest indoor theme park in the world
“Ferrari World, Abu Dhabi”. We have a bucket list of destinations in our travel plans for the future.
Something we don’t know about you! A big time fan of rock music of all kinds, but also enjoy many
different types of music. If life had a “do over” button I would be a lighting designer for the stage or musical
performance artists. (I came close in the early 1980’s doing stage lighting and sound design for what was
then called Central Florida Civic Theater)
